Salted or plain nuts: how to choose?
Salted or plain is not a quality question but a use question: salt is a surface seasoning, applied after roasting, that steers a nut towards the aperitif rather than the kitchen. Here is how to decide.

What the salt changes
Salt does not change the roasting, it sets it off: it sharpens the crunch and pushes the flavour towards the aperitif. A plain nut lets the roasting speak for itself — softer and more neutral on the palate.

Salted roasted nuts (almonds, cashews, pistachios, mixes) go with an aperitif, a cheeseboard or tea. It is also the format that disappears fastest from a table of guests.
