Practical guide — Storage
How to store dried fruit and nuts
Dried fruit and nuts keep best when kept away from three things: air, light and moisture. These are the five habits we use in the shop — they work the same for an opened bag or a gift box you have just received.
- 1
Move it into an airtight container
A glass jar with a seal, a metal tin or a resealable zip bag. Air is the first enemy: it is what softens a roasted almond’s crunch and wilts a dried fruit.
- 2
Keep it cool and out of the light
A dry, dark cupboard — away from the oven, the hob and the sink. Heat softens coatings (chocolate, caramel) and light degrades the oils in nuts.
- 3
Separate the families
Roasted nuts on one side, soft fruit on the other. Dates and figs release the moisture that makes tree nuts in the same container lose their crunch.
- 4
Watch for moisture
Fruit that sticks to your fingers or a nut that has lost its crunch both signal moisture. In summer, the softest fruits (dates, figs, apricots) keep better in the fridge, in a closed container.
- 5
Eat in the right order
Open what is already started first, and serve the aperitif mixes and tree nuts before the dried fruit — dried fruit tolerates waiting better. So a gift box gets opened at the nuts.
