How to choose nuts and dried fruit
Choosing nuts and dried fruit comes down to three simple questions: what for, is it fresh, and in what format. This is the method we have used since 1994 — in the shop and for a gift box alike.

Start from the use
An aperitif calls for salted roasted nuts (almonds, cashews, mixes); a breakfast or a platter calls for soft fruit (dates, figs, apricots) and plain nuts; a gift calls for a selection that combines the two. Start from the use, not from the variety.

Check the freshness
A fresh nut is crunchy and smells of roasting; a rancid nut smells of paint or old paper, and a soft nut has taken on moisture. With dried fruit, a dull skin and fruit that sticks both signal moisture. The best-before date is printed on every pack.

Choose salted, plain or coated
The three families sit side by side: salted roasted nuts for the aperitif, plain for cooking and everyday use, coated (chocolate, caramel) for sweets. A ready-made mix makes a platter simpler; buying separately lets you build to taste.

Know the varieties
The Moroccan classics: almonds, cashews, pistachios, walnuts, hazelnuts — and the rarer pecan, macadamia and Brazil nut. Each has its own texture: pistachio is finer, cashew creamier, walnut firmer. Go by the recipient’s taste.

Compare per 100 g and pick the format
Formats run from 250 g to a kilo, with the price shown per 100 g: that is the only honest comparison between two grades or two varieties. For regular use a kilo costs less per gram; to discover, start small.
